Glorious Indeed!
I made some glorious cupcakes for a trivia night. Chocolate cupcakes with cherry AND mint icing! If you are in like mint or cherry you will L-O-V-E it!
Cherry Icing
- 1 1/2 cups of confectioner's sugar
- 1/4 cup of butter, softened
- 3 tbsp maraschino cherry juice
- 1/2 tsp almond extract
- Mix the sugar and the butter together
- Add the cherry juice and almond extract, mix well
Mint Icing
- 4 cups confectioner's sugar
- 1/2 cup butter, softened
- 1/8 tsp salt
- 1 tsp mint extract
- 4 tbsp milk
- 2 (1 oz) squares unsweetened chocolate
- 2 tbsp butter
- Cream 1 1/3 cups of sugar with 1/2 cup butter or margarine, and salt.
- Blend extract, 2 tbsp milk, and remaining sugar into mix
- Gradually stir remaining mile into frosting until desired spreading consistency is reached!
They were so delicious! I regret not eating more!!
