Thin Mint Wonder

My Mother in Law was having a game night with some of her friends and wanted me to make some cupcakes. The only thing she asked was for them to be St. Patrick's Dayish.

I had seen this recipe before and had been dying to make it. I found a blog {realmomkitchen.com} that had this thin mint recipe on it and had to try it out and thought that my Mother in law would love it.



Yes that's a chocolate cupcake with green mint buttercream icing  topped with none other than crumbled thin mints and a little slice of a thin mint cookie.

Happy St. Patrick's Day!

I love St. Patrick's Day and what better way to celebrate it, than with a Guinness Cupcake with cream cheese icing.


I don't think I need to say much about this picture..... :)

I finally got around to making my strawberry cupcakes with kiwi icing and they are delicious!

I was kind of scared to make kiwi icing, but it does taste wonderful with a strawberry cupcake.

Red Velvet Cupcakes

I had a friend at work that wanted me to make her some red velvet cupcake with cream cheese icing. I can not pass up baking, so I kindly said "OK!"


I know I've already posted about  red velvet cupcakes, but this time instead of using red coloring gel I used food coloring. The food coloring didn't give off much of a red color as I hoped, but if you don't mind neither do I.

I also used half cake flour and half all purpose flour, which made the cupcakes very fluffy and moist.




I guess cake flour isn't bad after all! :)
