Cherries All Around!

I was wanting to make some cupcakes, but knew I had to clean the house before I could... Kind of like when you were a kid and had to do your homework before you could go play at a friend's house.

Since I made Strawberry cupcake yesterday I wanted to make another fruit cupcake. 

CHERRY was the winner (next will be blueberries or kiwi).

So I made Cherry Cupcakes with Cherry/Chocolate Icing. 

I've also found out from making many cupcakes, that I do NOT like cake flour. It doesn't change the taste of the cupcakes, just how they look. Next time no cake flour!!

My Sister, Becky called me up one day last week and wanted my to make Valentine's Day cupcakes for her daughter's Valentine's Day Party. She didn't want Chocolate, which was fine with me because I had been wanting to make strawberry cupcakes for some time now.

I did my research and found "The One" I like to combine recipes that I find to make them more of my own. 

I used fresh strawberries for the cupcakes and made strawberry cream cheese icing.

Glorious Indeed!

I made some glorious cupcakes for a trivia night. Chocolate cupcakes with cherry AND mint icing! If you are in like mint or cherry you will L-O-V-E it! 






Cherry Icing

  • 1 1/2 cups of confectioner's sugar
  • 1/4 cup of butter, softened
  • 3 tbsp maraschino cherry juice
  • 1/2 tsp almond extract
  1. Mix the sugar and the butter together
  2. Add the cherry juice and almond extract, mix well

Mint Icing

  • 4 cups confectioner's sugar
  • 1/2 cup butter, softened
  • 1/8 tsp salt
  • 1 tsp mint extract
  • 4 tbsp milk
  • 2 (1 oz) squares unsweetened chocolate
  • 2 tbsp butter
  1. Cream 1 1/3 cups of sugar with 1/2 cup butter or margarine, and salt.
  2. Blend extract, 2 tbsp milk, and remaining sugar into mix
  3. Gradually stir remaining mile into frosting until desired spreading consistency is reached!

Talk About Yummy!!

I have to admit, snow days are probably the best time to have fun with your cupcake experiments!

This cupcake was created after being stuck at home for the third day in a row.

A chocolate/peanut butter cupcake with chocolate/peanut butter/coffee icing.

And yes it taste just as delicious as it sounds. :)

Snow Day Treat!

Tuesdays Snow Day was a treat for me, I had the time to make up a recipe using fresh apples, cinnamon, and brown sugar. I also made  a Maple Brown butter cream icing; when putting this two wonderful tastes together you have the outcome of a fabulous cupcake!

Maple Brown Butter cream recipe

Ingredients:

v 2 Sticks of unsalted butter (at room temperature)
v 1 1/2cup of powdered sugar
v 1 cup of maple syrup
v 2 tsp of vanilla extract
v ¼ tsp of salt

Instructions:

1.   Combine butter, maple syrup, vanilla syrup and salt; mix well
2.   Slowly add Powdered sugar to mix making icing fluffy. Add more sugar powered if icing is not fluffy enough.

A Good friend of mine passed his PE test

Him and his wife were having a Congratulations party and I REALLY wanted to make them cupcakes. So, we came up with Red Velvet cupcakes with Cream Cheese Icing.

Naturally this was my first time making this kind of cupcake and icing, and I welcomed the challenge!

Cream Cheese Icing
Ingredients
v  2 (8 ounce) packages cream cheese, softened
v  1/2 cup butter, softened
v  2 cups sifted confectioners' sugar
v  1 teaspoon vanilla extract

Directions
1.    In a medium bowl, cream together the cream cheese and butter until creamy.
2.     Mix in the vanilla, then gradually stir in the confectioners' sugar.
3.     Store in the refrigerator after use.

I was lucky enough to get a cupcake order from a family friend.
She wanted yellow cake cupcakes and I made my very yummy marshmallow icing to go on top with pink and purple sprinkles.

I believe they came out wonderfully!
(This was my first, but not last, time I made yellow cake)



 I made 60 cupcakes!
